I love Verde Juice Bar in Winnipeg Manitoba! This juice bar offers vegetarian and vegan soups, salads, toasts, juices, smoothies, and more. While I was enjoying my kale salad the owner of the wool/knitting shop next door stopped by for her early afternoon coffee. Other locals also stopped in to eat, drink, and spend some time with the two charming owners.

The food was superb, the decor was simple and beautiful, and the atmosphere was welcoming.
When you go to Verde Juice Bar enjoy the vegetarian food and marvel at all of the pottery that house the wide variety of plants.
This is their vegan kale salad that tasted as wonderful as it looks. What a huge portion, but I ate it all!

When I landed at the Boston Logan airport I immediately opened my Happy Cow app to see where I would have lunch. La Sanghita popped up as a five star vegetarian restaurant in the East Boston area. The restaurant is right next to the airport, but because of all of the one way streets, I had to take a long circuitous route to get there. It was worth it!

I entered La Sanghita and was greeted by a friendly face and an invitation to try a gluten-free vegan kale cookie. This cafe looks like a small house from the outside and contains space for 18 to 20 people to sit. Food is prepared from scratch with mainly organic ingredients and a lot (if not all) gluten-free ingredients. It took a few minutes to get my food and I appreciated the love and attention put into my meal. La Sanghita does not use microwaves so my food was heated on the stove. Delicious!

Sweet Tomatoes in Schaumburg Illinois prepares and serves raw food. It is a delightful raw food vegan restaurant. It’s not far from Chicago. If it is your first time there they will give you a platter with their different “meats” to taste. Then you can order your favorite. What was my favorite? The taco “meat”.

June 2015: Laughing Planet Cafe for casual and delicious dining. Order your gluten-free, vegetarian, vegan, or paleo food at the counter. You will be given a number to take to your table of choice where they will bring you your food. The ingredients are fresh and from local sources whenever possible.
I ordered Bubbie’s Spring Bowl, a delicious combination of braised lab shoulder, red quinoa, steamed spinach, roasted asparagus, pickled red and watermelon radishes, and a yogurt-dill-pickled mustard seed sauce. I asked for the sauce on the side because I don’t usually like dill, but today I loved it! Even though this dish was not vegetarian, it was gluten-free.
It was nice to be at a restaurant where I had company at my table. Visit the Laughing Planet Cafe, I guarantee that you will not have to dine alone.
June 2015: Ome Calli is family owned and makes their own ice cream, popsicles and dairy-free popsicles (paletas) from scratch. They have a wide selection of dairy-free popsicles, including strawberry, watermelon, mango, guava, guanabana, pineapple, key, lime, and cucumber.
Ome Calli has expanded recently to two locations: Tualatin and Beaverton Oregon. I stopped in and spoke with the wife of the husband-wife-daughter team. She is lovely! When I asked if I could take her picture she chose to have her dragon in the background.
I ate the guanabana paletta, a dairy-free popsicle. Yum!

June 2015: This is the third time that I have visited and eaten at The Singer Hill Cafe in Oregon City OR. I absolutely love it there! The food is simple and clean, the vertical gardens are stupendous, and the energy is inviting and soothing.
I had this Seasonal Veggie Sandwich (which contained hummus) even though it was not gluten-free. Yum! If you want a gluten-free option they will use a gluten-free wrap instead of bread.

I had not seen a vertical garden until I walked into the Singer Hill Cafe. I love them! I sit and enjoy the beauty while I eat my delicious meal. They even have free classes on how to make a vertical garden!
In March 2015 I was in Boston MA and found a fantastic vegan restaurant cafe where they make their own vegan ice cream. Their ice cream is unusual because it is not your traditional rice ice cream or soy ice cream, it is nut ice cream and coconut ice cream.
So if you are in the Boston MA area and are in the mood for some soy-free vegan ice cream, stop in at FoMu – Alternative Ice Cream & Cafe for some home made deliciousness!
I found the vegan ice cream to be very filling and ate just one scoop. I was full!

I had some leftover cooked spinach in the fridge the other day so I decided to make a gluten-free quiche. Boy oh boy, was it ever delicious! I must have been hungry because I almost ate half of it!
I started with my favorite gluten-free pie crust. I pressed it into a 10 inch springform pan and baked it for ten minutes at 350oF before I added the filling.
Gluten-Free Pie Crust Recipe
1 cup rice flour
1/2 cup arrowroot starch (or tapioca starch or potato starch)
1 tsp guar gum
1/2 tsp sea salt
1/3 cup butter
1 to 3 tbsp water
Place rice flour, arrowroot starch, guar gum, sea salt, and butter in a food processor and blend well.
Beat together the egg and 1 tbsp water. Add into the food processor’s ingredients and blend until the dough leaves the side and forms a ball (add water, one teaspoon at a time if extra moisture is necessary or rice flour, 1 tbsp at a time, if the dough is too moist).
Press dough into the 10 inch springform pan with your hands. If making tarts, press dough into muffin tins or mini-muffin tins.
Bake for 10 minutes at 350oF and remove from oven.
Gluten-Free Quiche Recipe
Sauté the following in a tbsp or two of butter until tender:
1 red pepper, diced
1 zucchini, diced
handful of chives, minced
In a bowl combine:
1 to 2 cups of chopped, cooked spinach
Sautéed vegetables (above)
1/2 cup grated Parmesan cheese
6 eggs, beaten
Pour mixture into the partially cooked gluten-free pie crust.
Bake for 30 to 40 minutes at 350oF. Remove from oven and let sit for a few minutes before slicing.
