Vegan Restaurant, Fort Wayne IN

January 2018 – I have eaten at the Loving Cafe several times and always look forward to their 100% vegan food. This vegetarian restaurant is in Fort Wayne Indiana and is minutes from the highway.

Whenever I eat at the Loving Cafe, I choose a different main course or maybe have a soup and salad. Regardless of what I start with, I always end with a piece of raw vegan strawberry cheesecake. Yum!

Gluten-free Restaurant for Celiacs, Lugano Switzerland

November 2017 – Is it true that approximately 80,000 people in Switzerland are intolerant to gluten and one in five of these people are lactose intolerant? According to The University of Chicago Medicine, Celiac Disease Center, Celiac disease affects 1% of healthy, average Americans. That means at least 3 million people in our country are living with celiac disease—97% of them are undiagnosed.

I will say that in over twenty years of performing food intolerance testing, almost 100% of the people that came to me were intolerant to the lactose in milk and milk products. I also found that 95% of my clients were intolerant to wheat, 60% were intolerant to corn, and 40% were intolerant to soy. A very small percentage of people were intolerant to gluten. Rice Milk Gelato, Milan Italy

November 2017 – My sister took me to what is reputed to be the best Gelateria in Milan, Italy, Gelateria Solferino . I was amazed and delighted to discover that they had a couple of gelato options that are made with rice milk instead of cow milk! In addition, the sweetener used is stevia. How did they make a gelato out of rice milk? I wish I knew! It is as creamy and wonderful as all the other gelato options they had.

The day that we went they had pistacchio al latte di riso (pistachio dairy-free ice cream, milk-free ice cream) and stracciatella al latte di riso (chocolate chip dairy-free ice cream, milk-free ice cream). Eating these rice milk ice creams put me in a good mood for days!

If you are ever in Milan Italy, I highly recommend that you visit Gelateria Solferino for dairy-free ice cream.

Winnipeg Vegetarian Restaurant

February 2017

I love Verde Juice Bar in Winnipeg Manitoba! This juice bar offers vegetarian and vegan soups, salads, toasts, juices, smoothies, and more. While I was enjoying my kale salad the owner of the wool/knitting shop next door stopped by for her early afternoon coffee. Other locals also stopped in to eat, drink, and spend some time with the two charming owners.

The food was superb, the decor was simple and beautiful, and the atmosphere was welcoming.

When you go to Verde Juice Bar enjoy the vegetarian food and marvel at all of the pottery that house the wide variety of plants.

Vegetarian Restaurant, East Boston MA

March 2016

When I landed at the Boston Logan airport I immediately opened my Happy Cow app to see where I would have lunch. La Sanghita popped up as a five star vegetarian restaurant in the East Boston area. The restaurant is right next to the airport, but because of all of the one way streets, I had to take a long circuitous route to get there. It was worth it!

I entered La Sanghita and was greeted by a friendly face and an invitation to try a gluten-free vegan kale cookie. This cafe looks like a small house from the outside and contains space for 18 to 20 people to sit. Food is prepared from scratch with mainly organic ingredients and a lot (if not all) gluten-free ingredients. It took a few minutes to get my food and I appreciated the love and attention put into my meal. La Sanghita does not use microwaves so my food was heated on the stove. Delicious!

Gluten-Free Baking Hints – How to Convert Your Old Recipes

Here are some gluten-free baking hints so that you can convert your old recipes:

  1. Refrigerate dough or batter for 30 minutes before baking.
  2. Add extra leavening agents (e.g. yeast, baking powder, baking soda).
  3. Bake at a lower temperature (25°F lower) and for a longer period of time.
  4. Bake in smaller containers and smaller sizes.
  5. Make batters thinner than wheat batters.
  6. In general, gluten-free cakes do not rise as well so make several lower, flatter layers and stack with all-fruit jam in between the layers instead of making the cake in one large cake pan.
  7. Convert recipes that either call for cake flour or have lots of other ingredients in them (like grated carrots or zucchini) because these recipes do not depend on gluten to hold them together.
  8. If eggs are called for in the recipe, add an extra one to help hold the dough or batter together better.
  9. Substitute milk in the recipes with water or a milk alternative like rice milk, oat milk, almond milk, hazelnut milk, or soy milk.
  10. Add a few extra tablespoons of oil or butter to help keep the baked good moist.
  11. For every two cups of gluten-free flour used, add 1 tsp. guar gum.
  12. Package in plastic containers or plastic bags while still slightly warm and freeze.
  13. Use potato starch, tapioca starch, or arrowroot starch to replace wheat starch and corn starch in recipes. Also use these starches to thicken sauces and gravies.
  14. Use rice instead of bread to stuff chickens and turkeys.
  15. To substitute breadcrumbs use homemade breadcrumbs (from your rice bread), ground sunflower seeds, or cooked rice.
  16. Substitute rice noodles in all pasta dishes.
  17. Use rice crackers for dips and salads such as egg salad, tuna salad, and chicken salad.

March 2016: The weather here in St. Paul Minnesota has been delightfully sunny and warm. I stopped at a restaurant that offers Nepali, Tibetan, & Indian Cuisine on my way to the James J. Hill House for a tour.

Everest on Grand offers a lunch buffet every day which includes vegan and vegetarian options. I am not a fan of spicy food so I was a bit apprehensive when I entered, but the food was mild and flavorful. I had brown rice, a vegetable & dal dish, potatoes, salad, and dessert. Yum!

I will definitely return!

January 2016 – I had to add this Burmese restaurant to my blog because the food was beyond fantastic and there is no way that I want to forget where this restaurant is. Parking lot half a block away where you can park free for two hours.

They have vegetarian options and standard dishes can be made vegetarian. I ate these exquisitely flavored dishes:

Veggie Kebat

A mix of vegetables stir-fried with paprika, masala, tamarind, green chilies, mint leaves, tomatoes, onions and cilantro

Mango Salad

Shredded fresh green mangoes served with fried onions, fried garlic, cabbage, red onions, yellow bean powder, cucumber and dried shrimp (they left out the garlic and shrimp for me)

When they brought the mango salad to my table I was told that the Tea Leaf Salad is the most popular salad at Rangoon Ruby’s. I will have to try it next time!

This salad is a popular traditional treat unique to Burma. A mix of Burmese tea leaves, fried garlic, yellow beans, peanuts, sesame seeds, lettuce, tomato, jalapeno peppers and dried shrimp. This special salad will awaken your taste buds

Gluten-Free Organic Black Bean Noodles

There are several kinds of gluten-free noodles and I certainly have an opinion about each of them.

gluten-free white rice noodles

These Asian rice noodles are easy to cook. Submerge them in cool water and place on the stove. Heat until the water comes to a boil, stirring occasionally. Turn off the heat and strain the Asian white rice noodles when they are cooked to your liking.

I enjoy eating these with stir-fried vegetables.

My favorite brands are Trader Joe’s and Tinkyada.

These gluten-free brown rice noodles have to be added to abundant amounts of boiling water and stirred often until cooked. Taste them often because they go from being too hard to too cooked in a matter of seconds. Drain when aldente.

Corn is one of the top allergy-causing foods so I do not recommend eating these.

gluten-free black bean noodles

These gluten-free black bean noodles cook easily! Add to boiling water and cook until aldente. They do not clump together as much as the gluten-free brown rice noodles.

Warning – these noodles are very filling! I eat a smaller amount of these than I do of the gluten-free brown rice noodles and the gluten-free white rice noodles.

Sweet Tomatoes in Schaumburg Illinois prepares and serves raw food. It is a delightful raw food vegan restaurant. It’s not far from Chicago. If it is your first time there they will give you a platter with their different “meats” to taste. Then you can order your favorite. What was my favorite? The taco “meat”.
